Pumpkin Squares with Cream Cheese Frosting (Gluten-Free & Dairy Free)

Ingredients

1 pkg. Simple Mills Pumpkin Muffin & Bread Mix
½ cup water
2 tsp. vanilla extract
3 eggs
⅓ cup coconut oil melted
¾ cups dairy-free cream cheese
1 pkg. (11 oz.) gluten-free vanilla frosting


Instructions

Preheat oven to 350 degrees F. Line 9x9-inch metal baking pan with parchment paper and grease with oil.
In mixing bowl, whisk together Simple Mills mix, water, vanilla extract, eggs and coconut oil.
Pour batter into pan and spread evenly.
Bake 15-20 minutes, or until center bounces back when pressed. Let cool before frosting.
In bowl, use electric mixer with whisk attachment to blend together dairy-free cream cheese and frosting until light and creamy.
Using spatula, frost bars. Cut into 9 squares.
